Easy Crockpot Salsa Chicken Recipe

Only 3 ingredients!

As I write this, it’s November 8th and I have the windows and doors open here in northern Indiana, letting in some fresh Fall air. It’s sunny, 65º and the orange and yellow leaves are falling off the trees like rain. What a beautiful day for an easy crockpot meal so our family can get out and enjoy this beautiful weather, I hope you can too!

With only three ingredients, this recipe is an easy dump-and-go dinner. Perfect for a day full of work, or fun! Just put the ingredients in the crockpot and come back later for a completely easy, no-fuss dinner.

The How To

For this recipe, you’ll want to start with 4 boneless skinless chicken breasts, about 2 lbs. Place them in your crockpot and sprinkle in 1 tablespoon of taco seasoning. Finally, pour in 2 cups of your favorite salsa. Cook for 4-6 hours on low or 2-3 hours on high.

When it’s finished, shred the chicken with two forks and serve with fresh cilantro and lime wedges.

This chicken is great to eat on its own, you can top it with a sprinkle of cheese. You can also serve with Mexican rice, in a flour tortilla as a taco, or over tortilla chips… so many possibilities!

You can make up a big batch and serve for dinner, then freeze the rest in perfect portions for your family. Or store leftovers in the fridge for up to 3 days.
