Easy Mexican Rice From Scratch:
This recipe came from necessity, I needed Mexican rice and I didn’t have a box mix… and I’ve found that they aren’t always that great. I scoured the internet and found recipes that called for a boat load of spices I didn’t have. After experimenting, I found you can just use taco seasoning!
Add in a little lime juice and some cilantro and you have some of my favorite flavors in the world! Yum!
The How To:
All I do is chop up the cilantro and cut the lime into wedges. I also like to dice a tomato to throw into the pot to add some pretty pops of color in the rice. If i don’t have a tomato on hand, 1/4 of chunky salsa works the same!
I throw the rice, chicken stock and taco seasoning into the pot and cook according to the package instructions. I have not tested this recipe out with instant rice, I’m not sure I would recommend it- but if you do, let me know how it turns out in the comments.
After the rice has finished cooking I squeeze a lime wedge onto the rice and sprinkle on the chopped cilantro and stir to combine. You can let the rice hang out covered for 5 minutes to soak in the flavors.
When its done, serve it with a lime wedge on the side and a fresh sprinkle of cilantro!

Easy Mexican/Spanish Rice From Scratch
Equipment
- Pot with lid
- Cutting board
Ingredients
- 1 lime
- 1/4 cup chopped cilantro
- 1 half roma tomato
- 1 cup rice
- 2 cups chicken broth
- 1 tbsp taco seasoning
Instructions
- Cut lime into 6 wedges.
- Chop cilantro. Dice tomato.
- Pour rice, chicken broth, tomato and taco seasoning into pot, cook according to package instructions.
- After cooking, squeeze 1-2 lime wedges into rice, add cilantro as well and stir to combine.
- Serve with lime wedge and extra garnish of cilantro if desired.
