Onion Soup Mix Simple Crockpot Beef Roast Recipe
Classic & Comforting Beef Roast with Onions, Carrots and Potatoes

There’s nothing better than smelling a tasty dish cooking away all day in your crock pot. This beef roast is classic and satisfying and totally easy. It is a recipe that I got from my Mom and have had it all throughout my childhood. And now I make it for my family. Let me show you how to make it!

I wanted to start this blogpost out with what meat to buy at the grocery store. As a young mom I always had trouble figuring out which cut to buy. You get to the store and its overwhelming to see all the different kinds of beef to choose from. So let me make this easy for you.

First, when you are at the grocery store, look for a Boneless English Beef Roast. This recipe calls for 3 lbs. This is the technical cut of beef this recipe calls for. There are other kinds you can look for too!

  • Chuck roast
  • Pot roast
  • Rump roast
  • Serloin tip roast

The How To:

Place a pan on the stove and turn onto high heat. Pour in some oil, vegetable or olive oil (your favorite oil really is fine). Then add your roast to the pan. Let it sit and sear until you start to really smell it, turn it and let it brown on all sides. This takes about 8-10 minutes.

Next, add the beef and all the drippings to the crockpot. <—Here is the one I use, its my favorite! I’ve had it for years!

Pour the water around the sides of the beef. And then sprinkle the onion soup mix and Worcestersire sauce to the top of the roast. The Worcestersire sauce smells really strong but will give the beef a great depth of flavor!

Next, chop up the onion into a medium sized dice. Then, chop up potatoes into large bite size pieces, I usually quarter them. Finally, add the onion, potatoes and baby carrots to the crockpot. Cover and cook on high for one hour. (This helps everything get to temperature quickly) Then cook on low for 4 hours.

After cooking, put the roast onto a cutting board and let cool for 5-10 minutes so that it is manageable to cut. Cut into slices or pull apart with forks for bit sized chunks.

Place the meat back in the crockpot. Serve immediately or keep on warm until desired time.

Ingredients

  • 3 lbs Boneless English Beef Roast
  • 1 tbsp oil
  • cup water
  • 1 packet Lipton onion soup mix
  • 1 tbsp Worcestershire sauce
  • 1 onion
  • 12 oz baby carrots
  • 6-8 yukon gold or red potatoes

Instructions

  • Place a pan on the stove and turn on to high heat.
  • Pour in olive oil and sear the roast on all sides. 8-10 minutes.
  • Place the roast in the crockpot along with all the beef drippings from the pan.
  • Pour the water around the sides of the beef.
  • Sprinkle the onion soup mix on top of the beef roast.
  • Add the Worcestershire sauce to the top of the beef.
  • Chop the onion into a medium sized dice.
  • Quarter the potatoes.
  • Add the onion, potatoes and carrots to the crockpot.
  • Cover and cook on high for one hour.
  • After an hour, turn on low heat for 4 hours.
