Soft and Gooey Brownie Recipe From Scratch

This brownie recipe from Karina at cafedelites.com are my go to brownie recipe! They are so gooey and fudgy they almost taste like brownie batter.

Its a really simple recipe to make and I usually don’t even take out my mixer, I just use a whisk and a spatula. They are the perfect size to whip up to take to a friends house on short notice or for a simple dessert after dinner.

How To:

First, in a medium sized bowl you add some melted butter, that is still hot and completely melted in the microwave. Then add the oil and sugar and whisk together for 1 minute.

Then you add the eggs and vanilla, and mix for another minute. The batter starts to get lighter in color and you know its well mixed.

Next, add the flour, cocoa powder and salt. You can sift them in if you’d like, and fold all the ingredients together with a spatula. You want to keep the air you whisked into the added in egg and sugar mixture, so fold gently and don’t over mix. When it is just combined, pour it into a 8×8 baking pan.

Bake at 350 degrees for 20-25 minutes, I think I usually do around 23. When they are done, let cool completely and cut into large (9) or small (16) slices.

Equipment

  • Medium Bowl
  • Mixer or whisk
  • Square baking pan

Ingredients

  • ½ cup melted butter
  • 1 tbsp oil
  • 1⅛ cup sugar
  • 2 eggs
  • 2 tsp vanilla
  • ½ cup flour
  • ½ cup unsweetened cocoa powder
  • ¼ tsp salt

Instructions

  • Preheat oven to 350°
  • Grease an 8 inch square baking pan, set aside.
  • In a medium sized mixing bowl add completely melted butter, oil & sugar. Cream with mixer for 1 minute.
  • Add eggs and vanilla, beat for another minute until lighter in color.
  • Add in flour, cocoa and salt (sift in if you prefer).
  • Gently fold in ingredients until just combined, do not over mix.
  • Pour batter into pan.
  • Bake for 20-25 minutes until center is just set and no longer jiggles.
  • Remove and let cool until brownies are room temperature.
  • Slice into large (9) or smaller (16) brownies, enjoy!
