Copycat Hello Fresh Mini Meatloaves

This is such a fun spin on a classic! Meatloaf can be hard to make. It’s hard to cook all the way through, and by the time it’s done, it’s usually dry. Well not this recipe, it comes out juicy and has a fresh herb taste. So delicious!

This meatloaf recipe is unlike any other, try it at home! Here’s how…

The How To

First, mince up some onion and set it aside (mincing an onion is basically just chopping it up as finely as you can!). Then in a medium sized bowl add 2 pieces of bread with the crust cut off. For this recipe you need to use a white bread or a soft wheat bread, something that will easily break apart.

Heat up water in the microwave and dissolve the bouillon cube (You can also use 2 tbsp of beef stock concentrate). Pour milk and homemade beef stock concentrate over the bread. Mix with a fork to form a paste consistency.

Add the beef to the bowl. Season with garlic, rosemary, salt, pepper and minced onions. Then mix to combine. Form into 4 patties, about 1 inch thick. Place on a lightly greased sheet pan.

Bake in a 400º oven for 30-35 minutes. Until the internal temperature reaches 160º F. Serve and enjoy!

Ingredients

  • 2 slices of bread
  • 4 tbsp milk
  • 1 beef bouillon cube
  • 2 tbsp water
  • 1 lb ground beef
  • ¼ cup minced onion
  • ½ tsp garlic powder
  • ½ tsp rosemary
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  • Mince onion, set aside.
  • In a medium sized bowl, add two slices of bread with the crust cut off. Heat water to boiling in the microwave, let bouillon dissolve. Pour milk and beef stock concentrate over bread. Break it up into a paste with a fork.
  • Add the beef to the bowl. Season with garlic, rosemary, salt, pepper and minced onions. Mix to combine.
  • Form into 4 patties about 1 inch thick and place on a lightly greased sheet pan.
  • Cook in the oven at 400° for 30-35 minutes. Until the internal temperature reaches 160°.
