The Best Peanut Butter Cookies
The best nutty and buttery cookies!
These cookies are so SO good! They turn out fluffy and sandy and just melt in your mouth. This is my mom’s recipe she’s been using since I was a kid. She used to make them all the time, and now I make them for my family!
This cookie is simple and really quick to make. Its also makes a smaller batch of about 22 cookies, so they are perfect to take to a friend or make for your family to finish in a few days.
Fun note: the flowers in the pictures are from my girls, they were out playing in the yard and brought me some. I decided to try them out in the picture and they looked so cute 😊.
The How To
Start with a large bowl and add 1 stick of softened butter, peanut butter, sugar and brown sugar. Mix for 1 minute to cream together, mixture will look fluffy. Tip: if your butter is cold, just place it in the microwave for about 20 seconds. Open the door and turn it every 7 seconds and it will be perfect to use!
You can use creamy or crunchy peanut butter in this recipe, our family has tried both and they are both really tasty. Creamy gives you the classic peanut butter cookie, but crunchy adds a nice texture!
Next, add the egg, baking soda, salt and vanilla. If you are using salted butter, just omit the salt. Mix together again!
Finally, add flour and mix until just combined. Scoop into about 22 cookies.
Make crisscross patterns on the cookies with the tines of the fork, dipping the fork into small bowl of sugar after each cookie. Then sprinkle an additional pinch of sugar on each cookie. This is optional, but they turn out looking so classic and delicious!
Bake for 12-14 minutes. 12 minutes is a softer cookie and 14 is a bit crispier, whichever you prefer!
Once they are done, let cool on the pan for two minutes. Then transfer them to a wire rack or some wax paper to cool completely for 30 minutes. Store in an airtight container for up to 5 days (the first 3 days are the freshest). Or freeze for up to 2 months.

Ingredients
- ½ cup unsalted butter
- ⅔ cup peanut butter
- ½ cup sugar
- ½ cup brown sugar
- 1 egg
- ¾ tsp baking soda
- ¼ tsp salt
- ½ tsp vanilla
- 1½ cups flour
- 2 tbsp sugar in small bowl
Instructions
- Preheat oven to 375°
- Cream together in a large bowl butter, peanut butter, sugar and brown sugar for 1 minute.
- Add egg, baking soda, salt and vanilla, mix to combine.
- Add flour and mix until just combined.
- Scoop into about 22 cookies.
- Make crisscross patterns on the cookies with the tines of the fork, dipping the fork into small bowl of sugar after each cookie. Then sprinkle an additional pinch of sugar on each cookie.
