An easy recipe using a Roma Tomato!

Today I wanted to share with you a quick Pico De Gallo recipe using a roma tomato! This is a perfect easy recipe to make for your next taco night. With just 6 ingredients you can pull it together in no time, and add some extra flavor to your meal!

I love making this pico from a roma tomato because it’s easy to have them on hand, but really any ripe tomato will do. This recipe makes about 1 cup to 1.5 cups of Pico.

Let me tell you how to make it!

The How To

First, dice up an onion and add 1/4 cup to a bowl. You can slice your ingredients as small or as large as you’d like! Now add the juice of half a lime and a pinch of salt and garlic to taste. I used about 1/8 tsp of each!

Let the ingredients sit for ten minutes. This will marinate the onions a little and help them develop a more mild flavor. Then, dice up the roma tomato and add to the bowl. Finally, chop up some cilantro leaves. Add 1/8 cup to the bowl and mix to combine. Serve immediately for chill until ready to serve.

Serve over tacos, top enchiladas, or with your favorite tortilla chips! So easy and so fresh!

Ingredients

  • ¼ cup onion
  • salt to taste
  • garlic powder to taste
  • juice of half a lime
  • 1 roma tomato
  • cup chopped cilantro

Instructions

  • Dice onion, ad to a bowl with lime juice, salt and garlic. Let marinate for 10 minutes.
  • Dice tomato and chop cilantro. Add to bowl and mix.
  • Serve immediately or let chill until ready to serve.
