Valentine’s Day is one of my favorite holidays! As a kid, our parents would always make it so special for us. We would get flowers from our Dad, our Mom would make heart shaped pancakes and we would exchange those cheesy little Valentines.

Even as an adult I love to give my galentines at work special Valentine treats and those cheesy little notes! Did your families have any special traditions?

As a wife I am learning fun ways to show my hubby I love him and if you know my man, he LOVES cookies! One of his favorite cookies is the sugar cookie. In our house, we are dairy “avoidant” so I had to figure out a recipe that did not have butter or milk and this is what I found!

It is a tasty one and SOOO easy to make! I hope you love making them as much as we did! Better yet, check out our sprinkle recipe and make your own to add to your cookies!

*Pro tip for making something sweet… use a bit of powdered sugar on your counter and rolling pin instead of flour! This helps you not get that powdery texture on your sugar cookies.

Dairy Free Sugar Cookie Recipe Made With Coconut Oil

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp vanilla extract
  • 3/4 cup sugar
  • 1/2 cup coconut oil, softened not melted
  • 1 large egg

Frosting

  • 1 cup powdered sugar
  • 2 tbsp almond milk
  • 1/2 tsp vanilla
  • food coloring

Instructions

Cookie Instructions

  • Cream together the coconut oil and sugar in a mixing bowl.
  • Add vanilla extract and egg, mix until combined.
  • In a separate bowl add flour, salt, baking powder and mix to combine.
  • Add flour mixture gradually to sugar mixture, mix until combined.
  • Dust a rolling pin with powdered sugar, roll out dough to 1/4 inch thick.
  • Cut dough with cookie cutter and transfer to baking sheet. Chill in the refrigerator for 10 minutes.
  • Bake in a 350° oven for 8-10 minutes until sides are lightly golden brown. Transfer to wire rack or wax paper to cool for 1 hour and then frost. Enjoy!

Frosting Instructions

  • Sift powdered sugar into a medium sized bowl.
  • Add almond milk, vanilla and desired food coloring. Mix well, and frost cookies!
