The Easy Recipe To Make Classic Scotcheroos!

If you live in the midwest, Scotcheroos are a classic! They are like rice crispy treats but full of peanut butter, butterscotch and chocolatey goodness. There are a few variations of recipes going around out there, but this one is definitely my favorite!

Its real simple to make, and only takes a handful of ingredients!

 

How To:

First you measure out 6 cups of rice crispy cereal into a large bowl. Then you place a pot on the stove with sugar, peanut butter and light corn syrup. Once that is brought to a boil you pour the mixture onto the cereal and stir.

Next, place the gooey cereal mixture into a greased 9×13 pan. Pat lightly to smooth. I get a piece of wax paper and place it on top of the sticky cereal and smooth it with my hands over the wax paper, then there’s no mess!

I want to emphasize, pat lightly! The more you pack the cereal tightly, the tougher your bars will be. So just a quick smoothing will do!

Next you place 1 and 1/2 cups of chocolate chips and butterscotch chips into a double boiler on the stove (I use a pot with water and a heat safe bowl) and melt until smooth. You can also put them in a bowl in the microwave, just heat it in 30 second increments and stir often!

Once the chocolate and butterscotch mixture is melted, pour it onto the cereal bars and smooth to create a thin layer over all the cereal. Let set for an hour and slice into bars.

Ingredients

  • 6 cups Rice Krispies cereal
  • 1 cup peanut butter
  • 1 cup sugar
  • 1 cup light corn syrup
  • 1 1/2 cups chocolate chips
  • 1 1/2 cups butterscotch chips

Instructions

Cereal Mixture

  • Measure out 6 cups of rice crispy cereal into a large bowl.
  • Place sugar, peanut butter and corn syrup into medium pot on the stove. Stirring constantly, bring to a boil.
  • Once to a boil, take mixture off the heat and pour onto cereal in the large bowl. Mix!
  • Spread cereal into a greased 9×13 pan. Place a piece of wax paper over the cereal and lightly pat until you get a smoother surface.

Chocolate Topping

  • Bring a pot of water to a boil. Place heat safe bowl on top of pot.
  • Melt chocolate chips and butter scotch chips in the bowl, stirring constantly.
  • Pour chocolate mixture onto cereal and smooth.
  • Let set for 1 hour until chocolate is solid. Cut into squares and serve!
