Lighter Fettuccine Alfredo Sauce Recipe

A cozy home-cooked meal made simply!

Sometimes I find myself in a pinch for dinner and I need to pull something together quickly. Pasta is definitely easy, so I like to make a Lighter Fettuccine Alfredo recipe! We always add broccoli too!

This warm, home-cooked meal can be pulled together in 20 minutes, and it’s a fool-proof way to make a delicious Alfredo sauce! The great part about it is that it doesn’t use any cream or half and half, just milk.

Cheesy pasta with a side of broccoli, so easy and so comforting!

The How To

Bring a pot of water to boil on the stove. Cook your fettuccine according to package instructions. You can also use whatever pasta you have on hand!

Next, in a medium-sized bowl, pour in milk, flour, salt, garlic powder, and Italian seasoning. Whisk together!

Now, place a saucepan on the stove over medium heat. Melt the butter and then add the milk mixture. Heat until it starts to lightly boil. Let it simmer for 8-10 minutes while whisking. Once the sauce has thickened it will coat the back of a spoon!

Turn down the heat to low and add parmesan cheese and cream cheese. Whisk until completely combined. (*You can sub with some Neufchatel cheese, or fat-free cream cheese to make it even lighter)

Serve with drained pasta or add the pasta directly to the pan of Alfredo Sauce. Enjoy!

Equipment

  • Pot for boiling pasta
  • Sauce pan
  • Whisk

Ingredients

  • ½ lb fettuccine
  • 2 cups milk
  • 1 tbsp flour
  • ½ tsp salt
  • ½ tsp garlic powder
  • ½ tsp italian seasoning
  • 2 tbsp butter
  • cup parmesan cheese
  • 2 oz cream cheese

Instructions

Pasta

  • Bring a pot of water to a boil and cook pasta according to package instructions.

Milk Mixture

  • In a medium bowl, add milk, flour, salt, garlic and italian seasoning, whisk together.

Make The Sauce

  • Melt butter in sauce pan on medium heat.
  • Add in milk mixture. Bring to a low boil and simmer for 8-10 minutes while whisking. Sauce will become thickened when it coats the back of a spoon and then it is ready for the cheese.
  • Turn heat down and add parmesan and cream cheese. Whisk until completely combined. Serve with drained pasta. Enjoy!
