Chicken Topped With Mexican Style Panko And Sour Cream

This is one of our favorite chicken dishes! I got the recipe from a Hello Fresh meal kit a few years ago and we have been making it ever since. The recipe from hello fresh I think is rather choppy, it tells you how to make mashed potatoes and the other side dish alongside the chicken, so I thought I’d just sum up the chicken dish here!

I changed a couple of things with ingredients that are more readily available in my kitchen, and our family loves it even more. In fact, this is my daughter Norah’s favorite dish! Let me show you how to make it.

The How To

Start by preheating your oven to 425º. Place four thinly sliced chicken breasts on a baking sheet and pat dry with a paper towel. Then, season both sides of the chicken with salt and pepper.

Next, in a bowl combine panko, cheese, taco seasoning, a sprinkle of salt and pepper, and a drizzle of olive oil. And then set aside.

Tip: This recipe calls for shredded Monterey jack cheese, but you can use any kind of shredded cheese you have on hand. I’ve used mozzarella and colby jack and it has turned out just as delicious each time!

Finally, top each piece of chicken with a layer of sour cream and then mound the panko mixture on top of the sour cream, pressing so that it sticks.

Bake the chicken in the oven for 15-20 minutes until the chicken is fully cooked and the panko is crispy on top. Serve and enjoy!

Instructions
