For the Granola Bars:
1cupcreamy peanut butter
2tablespoonshoney
1teaspoonvanilla extract
2cupsrolled oatsblend into flour for a softer texture, optional
For the Topping:
1/4cupsemi-sweet chocolate chips
1/4cupbutterscotch chips
Instructions
Prepare the Base – In a large bowl, mix the peanut butter, honey, and vanilla until smooth. Stir in the rolled oats (or oat flour if using) until well combined.
Press & Set – Line an 8x8-inch pan with parchment paper and press the mixture evenly into the pan.
Melt the Topping – In a microwave-safe bowl, melt the chocolate chips and butterscotch chips in 30-second intervals, stirring until smooth.
Spread & Chill – Pour the melted chocolate-butterscotch mixture over the bars and spread evenly. Refrigerate for at least 30 minutes or until set.
Slice & Enjoy – Once firm, cut into bars and enjoy your homemade Scotcheroo Granola Bars!
