Scotcheroo Granola Bars: A No-Bake Snack

Ingredients

For the Granola Bars:

  • 1 cup creamy peanut butter
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats blend into flour for a softer texture, optional

For the Topping:

  • 1/4 cup semi-sweet chocolate chips
  • 1/4 cup butterscotch chips

Instructions

  • Prepare the Base – In a large bowl, mix the peanut butter, honey, and vanilla until smooth. Stir in the rolled oats (or oat flour if using) until well combined.
  • Press & Set – Line an 8x8-inch pan with parchment paper and press the mixture evenly into the pan.
  • Melt the Topping – In a microwave-safe bowl, melt the chocolate chips and butterscotch chips in 30-second intervals, stirring until smooth.
  • Spread & Chill – Pour the melted chocolate-butterscotch mixture over the bars and spread evenly. Refrigerate for at least 30 minutes or until set.
  • Slice & Enjoy – Once firm, cut into bars and enjoy your homemade Scotcheroo Granola Bars!
