  • 1 cup panko
  • ½ cup shredded monterey jack cheese
  • 2 tsp taco seasoning
  • salt
  • pepper
  • 1 tbsp olive oil
  • 4 thinly sliced chicken breasts
  • ½ cup sour cream


  • Preheat the oven to 425°.
  • Place four thinly sliced chicken breasts on a baking sheet and pat dry with a paper towel. Season both sides of the chicken with salt and pepper.
  • In a bowl combine, panko, cheese, taco seasoning, a sprinkle of salt and pepper, and a drizzle of olive oil. Set aside.
  • Top each piece of chicken with a layer of sour cream and mound the panko mixture on top, pressing so that it sticks.
  • Bake for 15-20 minutes until chicken is fully cooked.
