Ingredients

  • ¾ cup peanut butter
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • cup rolled oats or old fashioned oats
  • ¼ cup mini m&ms or mini chocolate chips

Instructions

  • Add the Wet Ingredients: Combine the peanut butter, honey (or maple syrup), and vanilla in a large mixing bowl. Stir until just combined.
  • Mix the Dry Ingredients: Add the rolled oats and mini m&ms. Stir everything together until well-mixed.
  • Shape the Balls: Using a cookie scoop, form the mixture into tightly packed 1-inch balls. No need to roll with your hands!
  • Chill & Enjoy: Place the energy balls on a parchment-lined tray or plate. Chill in the fridge for at least 30 minutes to allow them to firm up. Enjoy!
