The Best *Easy* Gluten Free (Dairy Free) Banana Bread

Equipment

Ingredients

  • 2 large over ripe bananas
  • cup oil
  • 2 eggs
  • ½ cup sugar
  • 1 tsp baking soda
  • ¾ tsp cinnamon
  • ¼ tsp salt
  • 1 tsp vanilla
  • cups 1:1 gluten free flour
  • cup chocolate chips or nuts optional

Instructions

  • Preheat oven to 350º for aluminum pans or 325º for a dark nonstick pan.
  • Add two large over ripe bananas to a bowl along with oil and mix well until the oil is totally combined.
  • Next add sugar and eggs, beat again.
  • Then add baking soda, cinnamon, salt and vanilla and mix.
  • Finally, add the flour and mix until just combined
  • Optional: you can stir in chocolate chips or nuts
  • Bake for about 50 minutes, let cool and enjoy!
