Ingredients

  • 12 oz rotini or penne pasta (my favorite: Barilla Gluten Free Penne Pasta)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup green bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1 cup mozzarella balls (bocconcini), halved
  • 1/2 cup salami or pepperoni, diced
  • 1/4 cup fresh basil, chopped

For the Dressing:

  • 1 cup Italian Dressing

-Or Homemade-

  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

Step 1: Cook the Pasta

  1. Boil the Pasta: Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Step 2: Prepare the Vegetables and Other Ingredients
